Baking is always a fun way to spend a weekend - who doesn't like their kitchen to smell of freshly baked cakes and cookies? It's a great way to relax and get creative - not to mention the fact that you get to eat your creations afterwards!
But despite our love of all things baked, we all know the importance of making sure our diets are varied and full of nutrients (unfortunately a diet consisting purely of cake isn't sufficient!). So, why not use vegetables in your baking as a healthier alternative?
Baking with vegetables is an easy way to add some healthy nutrients to your goodies, as well as helping to keep them moist and flavourful. Vegetable cakes are a great talking point - I bet nobody will believe that there's courgettes in your cupcakes, or carrots in your cookies!
