Pop the eggs, milk, cream, Vanilla Paste and cinnamon in a large bowl and whisk together until all combined. Pour into a large shallow bowl (big enough to fit a slice of challah bread in).
Heat a large frying pan with the oil over a medium heat. Dip 2 slices of bread into the mixture and flip over to soak both sides, pop one piece in the pan and sprinkle the chopped chocolate on top, pop the other piece of soaked bread on top to sandwich it. Fry on each side for about 1-2 minute until golden and slightly crispy, make sure you carefully flip over the bread to make sure the chocolate does not fall out. Repeat this with the other slices of bread.
Once your French toast is ready pop onto a plate and top with a dollop of crème fraiche, pop on the cherries and a sprinkling of orange zest. Finally top with some grated chocolate and a drizzle of maple syrup and ta-dah your brunch is ready to serve and tuck into!
