First things first, write out your fortunes on small pieces of paper. Preheat your oven to 150°C/130°C fan/Gas mark 2. Make up the egg white powder following the instructions on pack.
Pop the egg whites, oil, Vanilla Extract, Almond Extract and water into a large bowl and whisk together using an electric whisk until frothy. Mix together the flours and sugar and sieve on top of the egg white mixture. Whisk together until smooth. Finally add a few drops of Red Food Colour Gel and mix through until you have a bright red colour.
Cut 14 squares of greaseproof paper about 12cm. Pop a spoonful of mixture on a square of greaseproof and using the back of a spoon smooth out the mixture to form a 10cm circle which has an even layer of mixture. Repeat this for another square of greaseproof and pop the 2 squares of greaseproof onto a baking tray. Bake for about 8 minutes until the edges of the cookie have started to brown. Once baked and whilst they are still hot, pop a fortune in the centre and fold in half, then holding the 2 edges of the folded side, fold the cookie over a rim of a mug to achieve the typical fortune cookie shape – be careful of the cookie will be very hot, you can wear gloves to protect your hands. We recommend only baking 2 cookies at a time to give you time to shape them as they set very quickly. Place your shaped cookies into a muffin tin whilst they cool. Whilst your cookies are baking you can prepare all your cookie circles.
Once cooled store in an airtight container to keep your cookie fresh.
