Pre-heat the oven to 180°C/160°C Fan/Gas Mark 4. Place the Muffin Cases into a cupcake tin.
Cream together the margarine and sugar until light and fluffy. Gradually beat in the eggs, if the mixture starts to curdle, add a little flour. Fold in the remaining flour and the Cocoa Powder with a metal spoon.
Place spoonful's of the mixture into the Muffin Cases and bake for 15-20 minutes until well risen and firm to the touch. Remove from the oven and leave to cool on a cooling rack.
To make the buttercream, place the softened butter in a bowl and beat it with a hand-held electric whisk until light and fluffy. Gradually add the icing sugar and vanilla extract, beating until fully combined and smooth. Once ready, transfer the buttercream into a piping bag fitted with your preferred nozzle. Now, you’re ready to pipe that perfect swirl onto your cupcakes!
Take a sharp knife slice off any domed parts of the cupcakes
On a lightly floured surface, roll out the yellow, red, green, and blue fondant until thin. Using a cutter or knife, shape six lightning bolts.
For the scarf design, roll out a long, thin strip of yellow fondant. Cut small red strips and layer them on top to create stripes. Gently press them together, then trim any excess from the sides. Add frilled edges to both ends for a realistic touch.
For the glasses, roll out the black fondant and cut out two small circles. Carefully cut out the centre of each circle to create the rims. Then, roll a pea-sized amount of fondant between your fingers and place it in the middle to connect the two rims, forming the classic round Harry Potter glasses shape. Let them set before placing them on your cupcakes.
Pipe a generous swirl of creamy buttercream onto each cupcake. Then, gently place your Harry Potter fondant toppers on top. For an extra magical touch, sprinkle some Glamour and Sparkle Sprinkles to add a little shimmer and magic to your creations!
