Apple & Blackberry Tea Loaf

This loaf cake has reduced fat making it a healthier accompaniment to afternoon tea.

For the recipe Apple & Blackberry Tea Loaf

For the cake:

300 g Wholewheat Plain Flour (10oz)
1 Dr. Oetker Baking Powder Sachet x 1
100 g Light Brown Sugar (4oz)
2 ml Dr. Oetker Sicilian Lemon Extract (2-3 drops)
15 g Apple Sauce (1 tbsp)
Eggs x 2 (beaten)
300 g Blackberries (drained)
50 g Demerara Sugar (2oz)
200 g Low Fat Natural Fromage Frais




Preheat the oven to 190°C (170°C Fan, Gas Mark 5). Grease and line a 900g (2lb) loaf tin with baking parchment.


Mix the flour, Baking Powder and sugar in a bowl, and make a well in the centre.


Mix the Natural Sicilian Lemon Extract, egg and fromage frais together and pour into the well.


Gradually mix the ingredients together to form a thick batter. Carefully fold in the blackberries. Spoon into the prepared tin and smooth the top.


Sprinkle with the crushed sugar and bake for 45-50 minutes until risen and firm to the touch – a skewer inserted into the centre will come out clean.


Leave to cool in the tin, then turn out and peel away the lining paper. Slice to serve.
