For the recipe Apple & Blackberry Tea Loaf
|300 g||Wholewheat Plain Flour (10oz)|
|1||Dr. Oetker Baking Powder Sachet x 1|
|100 g||Light Brown Sugar (4oz)|
|2 ml||Dr. Oetker Sicilian Lemon Extract (2-3 drops)|
|15 g||Apple Sauce (1 tbsp)|
|Eggs x 2 (beaten)|
|300 g||Blackberries (drained)|
|50 g||Demerara Sugar (2oz)|
|200 g||Low Fat Natural Fromage Frais|
Preheat the oven to 190°C (170°C Fan, Gas Mark 5). Grease and line a 900g (2lb) loaf tin with baking parchment.
Mix the flour, Baking Powder and sugar in a bowl, and make a well in the centre.
Mix the Natural Sicilian Lemon Extract, egg and fromage frais together and pour into the well.
Gradually mix the ingredients together to form a thick batter. Carefully fold in the blackberries. Spoon into the prepared tin and smooth the top.
Sprinkle with the crushed sugar and bake for 45-50 minutes until risen and firm to the touch – a skewer inserted into the centre will come out clean.
Leave to cool in the tin, then turn out and peel away the lining paper. Slice to serve.
